In my Friday Favourites I mentioned Oh! Nuts' recipe for Red Velvet Cake Truffles. I tried this out yesterday and gave these treats as a present to my Grandma for her 85th birthday today. (WAAAY HAPPY BIRTHDAY, OMA!) I used this recipe to make the cake and the cream cheese frosting (definitely make less cake and less frosting! I literally threw out half the frosting because 750g of cream cheese make A LOT! I'd half these two recipes.) Also, I added quiiteeeee a lot of red food colouring into the cake recipe, yet the finished product wasn't red, it was brown.. and I was worried I had put too much in as the whole mixture smelled like beetroot (EW!). Anyway, the chocolate coating covers any beetroot taste there may be.. Oh, I also added less sugar to the whole recipe in general and I used almonds to top the truffles rather than the red candies the recipe suggests. :)
Overall, a fairly easy recipe to do but sooo time consuming! Could try this again with a different cake on the inside though? Chocolate? Lemon? You know, possibilities, endless..
